Apple Dapple Cake

I hope everyone had a wonderful weekend.I sure enjoyed this wonderful weather. It is hard to believe it is apple picking time again and time to enjoy all those yummy recipes.The one I made this evening comes from the church cookbook where I grew up in North Carolina. This cookbook is 31 years old and has made my family happy on many occasions.I have lots of cookbooks but I always seem to revert back to the church cookbooks.I like to give credit where credit is due especially when it comes to recipes.This one comes from a dear lady Mrs Emma Lee. She was my neighbor and was so kind to my grandmother and my sister and I . She lived in a mansion on the hill but she never acted like it. She opened her home to us as if we were family. She really knew how to cook to.I haven't spoke to her in years but she set alot of good examples for me to follow and use in my life. So here's to you Mrs Emma Lee..Enjoy

Apple Dapple Cake

2 Cups Sugar
1 1/2 cups Wesson Oil
3 Eggs
1tsp vanilla extract
3 Cups Plain Flour(sifted)
1 tsp soda
1 tsp salt
3 Cups chopped raw apples
1 Cups chopped walnuts

Combine sugar,oil and eggs and beat well with electric mixer. Add vanilla. Then add all dry ingredients. Add chopped apples and walnuts. Bake at 350 for 1 hour and 10 minutes. My oven cooks fast so I only cook mine for 1 hour.
Topping
1 Cup brown sugar
1 stick butter
Boil 2 minutes stirring constantly. Put on cake while hot.I like mine just plain cake but you could serve it with Ice cream or heavy whipping cream.
